This grain is alkaline and easily digestible. It acts as a probiotic and prevents constipation. Millet has a relatively low glycemic index.

Cooking tips: After rinsing grains under running water, add 1 part millet to 2.5 parts boiling water or broth. Bring to boil, reduce the heat and simmer for 15 minutes, then remove from the heat and leave uncovered for about 20 minutes. You can add some butter or oil, seasonings or herbs. For more creamy consistency stir millet frequently adding water or simmer it in 3.5 parts of liquid. You can also roast grain first in a dry skillet stirring until it gets golden and then add to boiling water.
Millet could be used in most dishes and desserts replacing rice or potatoes, in stir fries, soups, salads, baked bread and as breakfast porridge.
