Amaranth grain (actually a seed) is naturally gluten-free and an excellent source of antioxidants and fibre. It is also one of the best sources of plant-based high-quality protein rich in lysine (an essential amino acid rarely found in plants) and methionine. Amaranth tiny seeds are packed with minerals, including phosphorus, potassium, calcium, magnesium and iron. These nutritional features make the grain perfect for vegetarians and vegans.

Amaranth has a nutty flavour and a crunchy texture. It tastes great hot or cold, in starters, mains or desserts. Delicious as a porridge and a wholesome ingredient for your salad or to thicken your sauce and soup. It could be used in savoury as well as sweet dishes. 

Serving:  put in boiling water and simmer for 35 minutes in proportions: 1 cup of grain in 3 cups of water (for a porridge-like texture ) or 1 cup of grain in 1.5 cups of water (for a soft consistency with distinct grains).
